Observation (CORRECTED DURING INSPECTION): Glassware washer in bar - sanitizer is not detected after final rinse.
Corrective Action(s): Bottle was changed with fresh sanitizer and iodine was detected after final rinse. Use your test strips to verify that there is a final 12.5ppm iodine sanitizing rinse and records concentration.

Comments

Coolers (two door undercounter cooler, walk in, both bar coolers) are all at 4 C or colder.
Hot holding - none observed during inspection.
Thawing - defrost food in cooler or cold water.
Reheating and quick cooling - reheating on stove (to 74 C) and cool in sink in cold water bath. Reviewed procedures with staff - good.
Hand washing stations in the main kitchen, bar and staff washroom have liquid soap and paper towels.
Kitchen is well-organized and is being kept clean.
Raw meats are stored separately from other foods. Dry storage room is well-organized.
Quats sanitizer is in labelled spray bottle and is used on counters etc.
Dishwasher has a 50ppm final chlorine sanitizing rinse.
Glassware washer - see above.
Food Safe trained manager is on site.
Food safety plan is being followed (line/prep cooler with air temperature above 4 C is empty).
