- Operator has mailed the completed permit replacement form for the new permit. Ensure to replace the old permit with the new permit once it arrives in the mail.
- No frozen fish was thawing out at room temperature - good. Reminder that all frozen foods must thaw at 4C or colder (in a cooler or under cold, running water).
- All light covers are now in place - good.
- Additional storage shelf is now available in the dry storage closet - good.
- Deep cleaning for stoves/fryer has been done. Ensure deep cleaning of all equipment occurs at least once a week.
- Mop and mop bucket were not stored in food prep/clean food equipment areas - good. Reminder that mop bucket must be emptied each night.
- Bleach sanitizer solution available in labelled spray bottle - good. Ensure to add only 1 tsp of bleach to the bottle of water.
- Pest control invoice for June 2019 was available for review. Ensure pest control services are provided each month.
