Comments

-Staff are now only half filling the bus bins with food, times are not being written on the bins as to when it was cooked
-Only 3 bins sitting out at room temperature at the time of inspection, all three had just been cooked and food was over 60C
-bus bins have been thoroughly cleaned
-all raw meat is being stored below ready to eat products
-cleaning has been done
-probe thermometer on site for staff to monitor cooking and cooling temps
-Reminder that cooling must be done in shallow containers (only have full bus bins), 60C to 20C in 2 hours and 20C to 4C in 4 hours, time product is cooked is to be written on bus bins
