Routine check: Cooler is at 4 C. Record daily. Thermometers are available. Hand washing sink has liquid soap and paper towels. Hot holding is above 60 C - good. Cooling using a cold water bath - good. Ice packs used for some items during busy times - bring out in small batches to be consumed within 2 hours. Dishes and utensils are washed, rinsed, sanitized and air dried. Sanitizer 100ppm chlorine today - good.
