302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Quaternary ammonia compound sanitizer in spray bottles measured at 100ppm.
Corrective action: Sanitizer was discarded and a fresh batch will be made at prep time. Have a sanitizer available at all time to adequately disinfect food contact surfaces and prevent pathogen growth.
Corrected during inspection.
2) Utensils soaked in the large compartment of the 2-compartment sink. Operator mentioned the utensils are sprayed with sanitizer and air dried.
Corrective action: Rewash and sanitize all utensils by soaking utensils in sanitizer for at least 30 seconds to adequately sanitize food contact surfaces and prevent pathogen growth. All utensils must be first washed and rinsed and then soaked completely in sanitizer for at least 30 seconds.

3) Large bakery equipment such as dough mixer and bread baking equipment has food residue.
Corrective action: Deep clean and sanitize equipment to remove all food residue. Accumulation of food residue may allow microbiological growth and toxin production which may potentially contaminate food.

Observation (CORRECTED DURING INSPECTION): Food take out box stored on rack inside washroom.
Corrective Action: Operator moved opened pack of take out box to dry storage area during inspection. Storing food contact surfaces inside washroom can potentially contaminate them and hence contaminate food.

Coolers measured at less than 4C.
Freezer measured at -20C.
Washroom is in sanitary condition and has supply of hot/cold water, liquid soap and paper towel at the handsink.

No sign of visible active pest activity at the time of inspection.

All foods in cooler, freezer and dry storage covered.

Temperature and sanitation logs maintained.

Staff has valid FOODSAFE Certification.

Chemicals stored separate from food under the sink.

TB minute man disinfecting wipe (intermediate level disinfectant) currently used to wipe cashier counter.
