Observation: 1. Black buildup noted on the dish sink sprayer nozzle head.
2. White organic buildup noted on the inteior lid of the ice machine.

Corrective Action(s): 1. Clean and sanitize the dish sink sprayer nozzle head.
2. Discard the ice. Clean and sanitize the interior lid of the ice machine. At the time of inspection, the basin and ice making part of the ice machine appeared to be in a sanitary condition. When cleaning the ice machine, do not forget to clean the interior lid as well.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach spray bottle noted in the dinning area had more than 200 PPM chlorine residual detected. Chlorine test paper was bleached out.
Operator discarded the content of the spray bottle and refilled it with 100 PPM of chlorine.
Left operator with some chlorine test strips. Please obtain chlorine test strips from your chemical supplier so chlorine residual can be tested to ensure the correct concentration is obtained before using.

Comments

- Hand wash sink stations - All equipped with hot and cold running water, liquid soap and paper towel.
- Deep fryer, upright mixer, slicer noted cleaned during the inspection.
- Dry storage room noted clean and organized. Food stored in pest proof containers and at least 6 inches off the floor. No dented cans noted.
- Scoop handles in bulk food containers not stored in contact with the food.
- QUAT buckets (2 in the kitchen) and 1 QUAT spray bottle in the dinning area noted at 200 PPM.
- Final rinse temperature of the high temperature dish machine was at 81C.
- All refrigerator units were noted at ≤ 4C.
- Chest freezer and walk-in freezer were noted at ≤ - 18C.
- Refrigerator and freezer units were organized - Food kept at least 6 inches off the floor. Good storage hierarchy.
- No signs of pest during the inspection.

- No signature required due to COVID-19 pandemic.
