Observation: Wiping rags observed sitting on the counter when not is use.
Correction: Wiping rags when not in use must be kept submerged in sanitizer and the sanitizer changed every 2 hours as a minimum

***Recommend using a Quat sanitizer at 200ppm to submerge the wiping cloths as opposed to bleach as Quat does not impart any odor.
Front sushi bar cooler cold holding at <4c. Operator stated technician was called as unit was low on coolant. Ensure all coolers are monitored daily as per your food safety plan.
