Observation (CORRECTED DURING INSPECTION): - One hand sink in kitchen had no hot water or paper towels available; hot water faucet was loose.
- Another hand sink in one of three washrooms was missing paper towels.
Corrective Action(s): Ensure all hand washing stations are always supplied with hot and cold running water, liquid soap, and paper towels. Corrected at time of inspection.

Observation: - Raw fish was stored above or directly next to cooked items in walk-in cooler; Raw shell eggs stored above ready to eat items in walk-in cooler
- Food items in walk-in cooler and prep cooler were not covered
- Opened cans of tomato sauce were found in walk-in cooler
- Sanitizer solution in spray bottles too strong, bleached out test strip.
Corrective Action(s): - Store all raw fish and meat below cooked items and ready-to-eat items; Store raw eggs below ready to eat food items
- Ensure all containers and bins are properly covered
- Transfer tomato sauce to a food grade container
- Mix only 1 tsp of bleach with 1 litre of water for proper sanitizer concentration.

- Sanitizer solution available in spray bottles. Ensure to mix only 1 tsp bleach with 1 litre water.
- High-temperature dishwasher reached 72C at dish surface during rinse cycle
- Dishwashing area was maintained in sanitary condition - good. Reminder that the area directly to the right of the dishwasher must not be used to store dirty dishes - place all dirty dishes to the left of dishwasher or in three-compartment sink.
- All coolers were maintaining temperatures of 4C or colder
- Freezer was maintaining temperature of -23C
- No hot holding at time of inspection
- Dry storage areas satisfactory. Dry ingredient bins were covered and maintained in sanitary conditions.
- No signs of pest activity noted at time of inspection
