Observation (CORRECTED DURING INSPECTION): - Wire racks, table, and shelf observed to be lined with cardboard or newspaper. These paper also observed to be covered in grease and food debris
Corrective Action(s): - Informed operator not to line tables and other food contact surfaces with newspaper and cardboard for the shelving racks must be switched out daily due to the grease.

- Bleach sanitizer measured at 200ppm at the third compartment
- Dipper well at the ice cream freezers are observed to be in use, cold water is running
- Permit is posted
