Observation (CORRECTED DURING INSPECTION): Some potentially hazardous foods stored in sandwich prep cooler inserts were > 4 deg C.

Corrective Action(s): Discard these food items. Ensure that all foods in coolers are at <4 deg C. It is understandable that foods in the prep cooler inserts will be warmer due to constant opening and closing. If this is the case, you should time track your potentially hazardous food items in the inserts.

If they are >4 deg C, they must be used within 2 hours. Staff had indicated that foods are sometimes kept for 24 hours in this sandwich prep cooler. Only put enough foods in the sandwich prep inserts to use within a 2 hour period. Foods should not be stored in here for 24 hours as the lids are constantly opened and closed, exposing the foods to warmer temperatures and allowing for bacterial growth on them. Discussed this with manager over phone at time of inspection. Will discuss food safety plan with manager at follow up inspection.

Observation: Middle glass door panel for sandwich prep cooler is missing/broken. Staff had placed plastic wrap over the empty space.
Corrective Action(s): Repair/replace the panel immediately. This is also contributing to the warmer temperature in the prep sandwich inserts. Adjust the cooler to a colder temperature in the mean time to compensate.

Observation: Did not observe a thermometer inside the sandwich prep cooler. The electronic gauage on the cooler door is NOT a substitute for a thermometer.
Corrective Action(s): All coolers and freezers must have thermometers inside them so that staff can routinely check the temperatures.
