Hand sinks equipped with soap and paper towel

Coolers less than 4C/-18C

Sauce cooling at back at room temperature 40C to be transferred into cooler

Chicken wings/potatoes 21C cooling at back at room temperature. Operator states food has been cooling since before lunch rush, approx 1.5 hours. Staff transferred to walk in cooler immediately. When cooling transfer to walk in cooler while still slightly warm (40C) and do not cool for long periods of time at room temperature. Cool in walk in cooler.
