Observation: Sanitizer spray bottles 0 ppm Quaternary Ammonia.

Wiping rags in use have no sanitizer reservoir available for storage.

Icecream scoop dipper well heavily soiled with food debris.
Correction: Sanitizer spray bottles are to be filled with 200 ppm Quaternary Ammonia sanitizer and tested daily.

All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Icecream scoop dipper well is to be cleaned and sanitized daily.

Observation: Back kitchen handsink - all 3 soap dispensers available are empty and do not dispense soap for handwashing.
Correction: Hand-washing stations must be equipped with a stocked liquid soap dispenser, warm water and single use hand drying towels from a dispenser.

Reviewed processing of potentially hazardous foods (raw beef slicing) - ensure product is processed efficiently minimizing time spent at room temperature, return product to coolers when staff change activities.
Sanitizer spray bottle equipped with 200 ppm Quaternary Ammonia
Sanitizer dispenser repaired, dispensing 200 ppm Quaternary Ammonia
Icecream scoop dipper well maintained in sanitary condition.
Wiping rags stored in 100 ppm chlorine, Ensure use of sanitizer is consistent throughout premise. Store rags in 200 ppm Quaternary Ammonia to compliment sanitizer available in spray bottles to avoid adverse chemical reactions.
Handwashing facilities restored in back kitchen area - warm water, stocked liquid soap and papertowel dispensers.
Required premise cleaning completed. Ensure cleaning is conducted on a daily basis to maintain premise sanitation and discourage pest activity.
Additional pest control service contracted to address rodent activity.

Note: To better pest proof premise install door sweeps for both kitchen entrance door and storage closet door. Gaps between door and floor to be less than 1 cm to exclude pests.
