Observation: -No Sanitizer detected in bucket of sanitizer and third sink
-Mold noted inside ice machine-picture taken
Corrective Action(s): -Bleach was available instructed the staff to make bleach solution for third sink and buckets - Ensure to have proper surface sanitizer at all time and use test strip to check concentration
-Clean and sanitize the ice machine including under cover plate and ice making parts

Observation: No sanitizer detected in third sink- sanitizer dispenser was empty at the source
Corrective Action(s): -Instructed the staff to use bleach at time of visit
-Sanitize all dishware using bleach solution ( at least 100 ppm)- soak for two minutes and let it air dry

Observation: -Ice scoop is stored inside machine and with handle in touch with ice
-Ice in ice machine is contaminated - mold noted
Corrective Action(s): -Keep ice scoop outside of the machine in clean container or in ice scoop holder
-Discard all ice - clean and sanitize the machine

Observation: Poor cleaning is noted in entire kitchen floor, wall , under equipment

Comments

-Temp of all coolers and freezers are satisfactory ( <4 oC and <-18 oC)
-Hot holding units all >60 oC
-Soap and paper towel are provided at hand wash sink
-Personal hygiene was observed good
-No sign of rodent noted
-Temp check for chicken is being done 4 times per day
-Temp log are being maintained
-Accurate thermometers are available in coolers and for food

-Person in charge reported that there was a fire on Tuesday 8:30 am, - it was put out by the staff and the store was closed for that day- store was cleaned by the staff and everything was discarded.

**In future ensure to report any fire in the facility to the area inspector- professional cleaning is required for fire in food facility.

** Water is accumulating under equipment and sink area- fix it.

-submit a report regarding the fire and corrective action taken on site.
