Observation (CORRECTED DURING INSPECTION):
The hand washing sinks in the baking and dishwashing area have no paper towels. To properly wash hands, staff require paper towels to dry them and discourage drying them on their aprons or using a cloth towel.
Corrective Action(s):
Immediately fill the empty paper towel dispensers, and ensure they are kept full. During the inspection, staff filled the dispensers.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
Plastic milk cartons are being used as a table between the oven and fryers. The plastic carton are cleaned/replaced weekly. Plastic milk cartons are not durable, food grade, nor cleanable.
Corrective Action(s):
Stop using the milk cartons as a table and purchase a proper stainless steel table or shelving unit that is durable, sealed, and cleanable.

Observation:
1) The waste pipe for the 1st and 2nd sinks of the 3-compartment sink are leaking. Water is pooling on the floor and the waste pipe has food accumulated on it, this will attract and harbor pests. This violation was noted in the last inspection report and it still hasn't been fixed.
2) Hand washing sink faucet, by the 3-compartment sink, constantly drips. The dripping water will attract pests.
Corrective Action(s):
1) Repair the leaking wastes pipes so they don't leak.
2) Repair or replace the taps on the faucet so water can be fully turned on/off.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -22C; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is satisfactory. No signs of pests.
- Foods stored in food grade containers; covered; date coded; labeled; stored in groups with raw proteins below RTE foods; and 6" off the floor on shelves.
- No expired foods in use. FIFO rules being followed.
- High temperature dishwasher rinse cycle was 78C at the plate's surface as per max/min thermometer.
- Quats sanitizer in spray bottle was 200ppm.
- FoodSafe certified staff present.
- Ice machine door has been replaced.
- The foam cover has been removed from the dishwashing area, all surfaces are cleanable.
**A follow-up inspection to be conducted on Nov. 14/17 to ensure repairs are completed to all the plumbing issues.**
