Spoke with Meat Manager on site EcoLab confirmed spray hose quat sanitizer is set at 400ppm, while sink sanitizer dispenser at 200ppm Two options: - As per your SOPs, set sanitizer to 200ppm and check using existing test strips - Keep at 400ppm provided EcoLab can provide documentation stating product is still food safe at 400ppm AND use test strips that can accurately test at 400ppm *Note: if product is not food safe at 400ppm (or unknown), use an extra rinse step after sanitizing to remove sanitizer residual.
