Observation (CORRECTED DURING INSPECTION): One container of cooling cheese sauce in the Walk-in cooler at 34 deg C.

Worker indicates the cheese sauce was removed from the ice bath and placed in the Walk-in cooler approximately 30 minutes ago
Corrective Action(s): Do not place warm foods in the fridges.

Transfer the cooling foods from the ice baths to the fridge once the temperature cools to 20 deg C

Operator placed cheese sauce back in ice bath -probe thermometer available for monitoring
