Observation: Glasswasher observed to be not dispensing soap into the wash tank. Sanitizer being properly dispensed and tested at approx. 75ppm.
Corrective Action(s): Glasswasher is closed. Rewash all glassware using the kitchen dishwasher. Contact service technician for repair. Glasswasher may be used again once repaired by technician.

Observation: Underside of counters above food preparation surfaces observed with food splatter build up.
Cooler next to grill observed with excessive food product build up inside.
Floor under the main prep coolers as well as the floor under the grill observed with food spillage build up especially at the floor/wall interface.
Several plates in clean section observed with food affixed. These were removed as well as others in the same stack to be rewashed.
Corrective Action(s): Clean underside of counters daily as discussed
Clean cooler and floor as discussed.
Ensure staff have been trained on how to properly prerinse/prescape dishes prior to going through the dishwasher

Monitoring records being maintained
Wiping cloths stored in quat sanitizer when not in use and solution changed every 2 hours.
Dishwasher at approx 85ppm chlorine, soap dispensed into wash tank. Wash temperature at 125F
Ice machine is clean (Top side).
Food labelled and covered inside walk in cooler.
*Recommend relocating glass jars of pickles currently stored on shelf directly above entrance to liquor cooler.
