Observation (CORRECTED DURING INSPECTION): Pizza sauce was kept at room temperatures for 10 hours according to operator. When 10 hours were not reached at the end of the day, operator moved the pizza sauce back into the cooler and take it out again for the next day for the remaining hours.
Corrective Action(s): Do not move time tracked items back into the cooler. Any time tracked items must be discarded at end of the day. Discard the pizza sauce.
