Routine inspection

Kitchen:
- Hand washing sink supplied with hot cold running water, Soap and paper towel.
- Sink and surface sanitizer available and tested
- Low temp dish washer final rinse detected with 50-100 ppm CL2. Implements on dry rack sorted and organized.
- Walk in cooler measured at 4C or colder. Raw - Cooked food separation observed. Food labeled and covered properly. Ensure monitoring log is kept updated.
- Line cooler measured at or below 4C and temp. monitoring log maintained and kept updated.
- Freezers measured at -18C or colder.
- Under counter coolers were at or below 4C. One unit was not operations and due for repair at this date.
- Lamb Sous- vide procedure discussed.
- Hood exhaust grid noted clean and maintained.
- Dirty and clean cloths separation observed.

Bar:
Hand washing maintained.
Ice maker observed clean and ice scoop stored in sanitary condition outside of the ice bucket.

General sanitation is satisfactory.
