209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Majority of the food products were stored on floor in both walk-in cooler and freezer.
2) Food products found in walk-in cooler, freezer and prep coolers were not covered properly.
3) In the food prep area, one of the staff was observed using garbage bin (with garbage in it) as a table for placing food container.
Corrective Action(s): 1) Ensure that the food is stored at least 6" off the floor.
2) Food must be stored in a manner that prevents the risk of contamination. Properly cover the food products prior to storing them in the refrigeration units.
3) Garbage bins are tend to be filthy and can contaminate food products. Do not use them during food handling. Staff removed the container at the time of inspection.

Observation (CORRECTED DURING INSPECTION): During inspection, it was observed that back door was wide open that could allow pest & rodents to enter the facility.
Corrective Action(s): Keep the back door clsoed at all times to prevent pest entry. Screen doors can be used as an alternative to maintain air circulation during hot days. Door was closed at the time of inspection.
NOTE - This is a repeated violation.

Comments

Routine inspection conducted at food facility and the following observations were made during the inspection:

Temperature:
- Walk-in cooler maintained at 2C.
- Walk-in freezer at -10C.
**Minimum temperature requirement is at least -18C.
** Ice build-up noticed in the freezer. Consider defrosting or service it accordingly.
- Prep cooler (x2) maintained at less than 4C.
- No hot holding at the time of inspection.
- Pop cooler in front area at 3C.
- Temperature logs were maintained but not found up-to-date (last day of recording temp. June 19, 2021)
**Record the temperature of refrigeration units at least once per day and maintain logs up to date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and hand dryer.
- Sanitizer bucket available and the concentration of bleach noted at 200ppm.
**Soak the wiping clothes in the sanitizer bucket before/after wiping food contact surfaces. Do not leave them on food contact surfaces.
- 3 compartment dishwashing sink was available and the concentration of bleach noted at 200ppm.
- Washrooms maintained in good sanitary condition with supply of hot/cold running water, liquid soap and hand dryer.
- Meat slicer was clean and staff demonstrated proper cleaning and sanitation procedure (bleach 200ppm).
- Oven was clean and no visible dirt/grim build-up.
- Ventilation hood was last serviced in Feb 2021.

Storage:
- Chemicals and cleaners, were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

COVID-19 Safety Plan:
- A copy of COVID-19 Safety Plan was available on site.
- Appropriate COVID-19 signage and protocols were in place.
** Conduct daily staff health checks and maintain record for at least 30 days.
** Maintain a tracking log for cleaning and disinfection of high touch area.
