Operator has valid equivalent to Food Safe. Food safety and sanitation plans are available and temperature records are being kept for coolers.
Catering - keep temperature /time records for hot and cold foods that are catered.
Coolers - satisfactory (4 C /40 F or colder).
Hot holding - soup on stove is at >60C. One soup is currently being reheated for lunch hour.
Frozen foods for customers to take home - ingredient information and reheating instructions are available.
Produce is washed unless pre-washed and ready to eat.
Sanitizer (chlorine bleach) is available.
Dishwasher has a final sanitizing rinse of 73 C measured inside of the machine when 75C was measured on the gauge - good.
Check the inside temperature (at the plate surface) of the dishwasher regularly to make sure it is providing a final hot water sanitizing rinse of 71C inside of the machine and note the temperature on the final rinse gauge. (Gauge may not be reliable)
