Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (i.e. 3 packs of beef, raw eggs, milk/cheese) stored in beer walk-in cooler had internal temperature ranging between 7-9'C. Ambient air temperature at 8.5'C. Moved to coolers available in kitchen.
Corrective Action(s): Do not store cold potentially hazardous food in this unit until approved by the health inspector.

Observation: Accumulation of food debris and dusts were observed on floor underneath/behind all kitchen equipment (i.e. coolers, sinks, stoves). Can carriers observed on floor under the bar sink.
Corrective Action(s): Ensure to have all floors cleaned after each shift as discussed.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Walk-in cooler operating above required temperature of 4'C. Operator had advised technician was in prior to the inspection and the temperature had been coming down.
Corrective Action(s): Continue to monitor the temperature and notify health inspector. Unit should not be used to store cold potentially hazardous food until approved by the health inspector. Non-potentially hazardous food such as beers, whole vegetables/fruits can still be stored in the unit.

Routine inspection conducted:

- Handwash stations adequately supplied.
- Coolers in kitchen operating below 4'C; Stand-up freezer operating at -18'C
NOTE: Ensure to have the freezer moved to one side of the storage and kept away from non-food items stored in the same area.
- Thermometers available in each unit for temperature monitoring.
- Glasswasher achieved 12.5ppm iodine at final rinse.
- Low temperature dishwasher achived >50ppm chlorine at the plate level after final rinse.
- Ecolab Smartpower available for disinfection of surfaces.
- Washroom handsinks satisfactory.

NOTE: Operator contacted the technician as soon as he discovered the walk-in cooler was operating above 4'C. Cold potentially hazardous food were transferred to coolers available in kitchen. Majority part of the unit is used to store beers. Operator not to store any cold potentially hazardous food until approved by the health inspector.
NOTE: Facility does not have much cold potentially hazardous food stored on site at this time. Enough cooler space available in kitchen.
