Observation: Multiple (>20) fruit flies observed in the dishwashing area, and the area near walk-in cooler. Operator stated grease trap was emptied recently and that flies do appear when grease trap is full.
Corrective Action(s): Please contact pest control to have area assessed. Alternatively, try fly strips to remove pest issue.
Assess area for standing (pools) of water. All standing water should be removed to reduce pest harbourage areas.

Observation: Soiled cardboard observed to be used to line shelving. Some cardboard heavily soiled with grease. Cardboard can also be harbourage point for pests.
Corrective Action(s): Remove soiled cardboard. Try not using cardboard as shelf liner. All equipment used in kitchen should be made of a smooth, durable and non-absorbant material.

All products were either in original packaging or covered inside coolers.
