- Replace the soiled sticky traps with new ones.

Observation: Staff was using paper towels to line prep station in the back. Paper towels appear to be soiled and dirty.
Corrective Action(s): Discard the paper towels. Use a metal bin or durable tray in order to properly wash and clean the cooking equipment.

Comments

- General sanitation is satisfactory.
- Main handwash station equipped with hot/cold running water, liquid soap in a dispenser and single-use hand towels.
- Two compartment sinks available for manual warewashing.
- Dry storage area has adequate space and wire racks. Basement storage unit will be checked during the next follow up inspection.
- Operating Permit posted with valid decal.

Temperature control:
- All coolers < or = 4C
- All freezers < or = -18C
- Working thermometers inside all coolers.
- Please keep daily temperature log for all coolers and freezers. Unable to verify at the time of the inspection.
