Observation: Two following two changes have occured without the approval of the Environmental Health Officer:
1. Designated handwashing station was converted to a dumping sink for coffee/liquids.
2. Santizer buckets are not being used for santizier. Green buckets have replaced sanitizer buckets and are being used for detergent.
Corrective Action(s): Operator to provide rationale for the changes to sanitzing procedures.
Operator to change all handwashing sinks back to originally approved uses. Operator to provide alternative method for dumping of liquids/coffee. For further clarification, please contact Environmental Health Officer.

Routine inspection.
All coolers are 4c or below and equipped with thermometers.
Walkin cooler in back area at 3c.
Walkin freezer at -19c.
Freezer at -18c.
Hot holding >60c for all holding units.
Temperature logs are available.
Foods are being stored off the floor and protected from contamination.
Cleaning schedules are available.
Quat sanitizer at 200ppm concentration in three compartment sink.
Quat sanitizer in spray bottles is available in front serving areas and at 200ppm concentration.
All quat sanitizers are labelled.
Employees observed to be wearing proper protective wear (ie. uniforms and hats).

The following requires operators attention:
1. see above noted violation(s)
2. Ensure to clean external components of all equipment including all coolers, freezers and storage areas.
3. Ensure all employees wash their hands before and between all tasks, especially after sweeping/cleaning duties and handling food items.
