Observation (CORRECTED DURING INSPECTION): Bleach pail had no detectable chlorine sanitizer.
Corrective Action(s): Chlorine sanitizer at 100ppm to 200ppm must be prepared and ready for use at all times while facility is in operation. Bleach at 100ppm was prepared at the time of inspection.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Staff member was observed leaving the kitchen and returning to work without washing his hand. Staff member was also observed wiping his hands on his clothes and rubbing his nose without washing hands prior to working in the kitchen.
Corrective Action(s): Staff members must wash their hands whenever their hands become potentially contaminated (touching their face, touching clothes, leaving the kitchen to perform other duties, etc.). Review proper hand hygiene and handwashing practices with staff.

Observation (CORRECTED DURING INSPECTION): Half a pail (approximately 10L) of yogurt was found in the facility which was made on site.
Corrective Action(s): All foods used in a commercial facility must be from approved sources. Currently facilities are not allowed to prepare and serve yogurt on premise unless they have a dairy licence. Yogurt was discarded at the time of inspection. In the future, all yogurt not in it's original container will be assumed to be from an unapproved source and will be discarded.

Observation (CORRECTED DURING INSPECTION): An opened container of powdered laundry detergent was stored directly on top of an unopened container of bungee.
Corrective Action(s): Chemicals must be properly stored separately from foods to prevent potential contamination of foods. Laundry detergent was relocated at the time of inspection.

Observation: Facility was found to have a fruit fly issue in the kitchen.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Front display cooler was at 4C.
-Outside freezer was at -14C.
-Upright freezer was at -17C.
-3-compartment sink was prepared with bleach and tested at 200ppm.
-Front items on display by the front were protected from potential contamination.
-Scoops were stored in a sanitary manner.
-Food items are no longer stored in poultry containers.
-Raw meats were properly stored separately and below ready-to-eat foods.
-General sanitation satisfactory. Ensure staff pay attention to the shelving units in the walk-in cooler.
