pH logs onsite and available for review. Fermented products target pH of 5.3 met. Ensure pH logs are maintained and available for review at all times. Reminder that the pH buffer solutions 4 and 7 need to be replaced on a regular basis. Calibrate pH meter on a monthly basis.
