306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Some improvementn made in cleaning around the corner area by the main prep table. However, there are still a number of areas requiring your attention:
1) remove boxes/items not used on top of cooler by the back door
2) clean tops of buckets so that there is not food debris/sugar/syrup etc that can attract pests (ants, flies, etc)
3) Remove boxes/items around your storage area that you are not using (such as the large long box for the light bulb)
4) Mop floor by the 3 compartment sink as there is caked on dirt/mud on the floor
5) Clean and sanitize your 3 compartment sink: there is pink and brown/black colored mold and mildew accumulating in the corner of yor sinks
6) Clean the vent and grates inside your upright cooler (the one beside your walk in freezer). There is severe food and debris buildup

Corrective Action(s): Continue cleaning and address the above mentioned areas immediately.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 3 out of the 5 coolers were not at <4 deg C:
Left and middle display cooler in front area were at 8-10 deg C,
Back upright cooler by exterior door was at 9 deg C.
No potentially hazardous foods in these coolers, all PHFs were in the other 2 working coolers.
Corrective Action(s): Operator said that the repair person would be on site to fix the coolers on Tuesday. Follow to be conducted to verify that all cooler are operating at <4 deg C. If coolers are not functioning by follow up, further enforcement actions may occur.

-Bleach water in spray bottle at 100 ppm chlorine residual
Some cleaning progress made in back kitchen but there is still quite a bit of cleaning required. As well, the above mentioned coolers need to be serviced.
The front area is well maintained and is tidy/ free of debris/dirt, etc. It is important to maintain the back kitchen area as clean and sanitary as the front customer area is, especially because that is where all of your food is prepared.

Follow up inspection is to be conducted. If above mentioned issues are not addressed, further enforcement actions may occur. Check thermometers in your coolers to make sure that the are all at <4 deg C after you get them serviced.
