Routine Inspection Conducted

1. Temperatures:
- 2-door stainless steel cooler at 1'C
- 2-door stainless steel freezer at -19'C
- Under-counter prep cooler #1 in back at 2'C
- Under-counter prep cooler #2 in front service area at 3'C
- Sandwich cooler at 1'C (top and bottom)
- Beverage cooler at 3'C
- Hot-holding units at >60'C
- Cooling procedures for roast beef discussed with manager and food safety was verified
- Thermometers available in all coolers
- Temperature logs available

2. Sanitation:
- General sanitation of premises satisfactory during inspection
- Hand washing stations in staff washroom, prep area and in service area supplied with liquid soap, paper towel, hot and cold running water
- QUATS sanitizer spray bottles (x2) and sanitizer pail with wiping cloth measured at 200 ppm QUATS concentration
- High-temperature dishwasher reached 81.7'C at plate surface (exceeds minimum required temperature of 71'C for final rinse)
- 2-compartment sink available with drain plugs
- Meat slicer cleaned and sanitized in place after each use. Meat slicer parts are cleaned and sanitized in the 2-compartment sink. Meat slicer is used once daily as verified by management
- No signs of pests during time of inspection

3. Storage:
- All food observed covered
- All food observed stored at least 6 inches off the floor
- Raw meats stored separate from ready-to-eat foods
- Chemicals stored away from food

4. Administration:
- FOOD SAFE Level 1 trained staff available on premises (expires March 1, 2025)
- Operating permit visible during inspection
