209 - Food not protected from contamination [s. 12(a)]
Observation:
Bait boxes containing rodent poison found in food storage and processing areas (kitchen). This is unsafe as the poison could be spread via rodent feet and hands when they touch it, and then walk elsewhere.
Corrective Action(s):
Immediately remove all bait boxes from food processing and storage areas. Only mechanical means of eliminating pests shall be utilized.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
1) There are gaps at the base of each door leading out of the kitchen, to other areas of the facility. These gaps will allow pests to enter the kitchen.

2) Interior and exterior garbage cans do not have tight fitting lids on them, to exclude pests. This will attract and breed pests.
Corrective Action(s):
1) Install door guards or door sweeps at the base of each door leading out of the kitchen, to exclude pests entering.

2) Purchase and place tight fitting lids on all exterior and interior garbage cans. The lids shall be kept on the garbage cans at all times, when not in use.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The high temperature dishwasher has broken temperature gauges and lights. Staff are unable to determine if the temperature is reaching the required levels for washing and sanitizing.

2) The sink, in front of the dishwasher, is leaking and water is pooling on the floor. This will provide a water source to pests.

3) The drain pipe, under the sink in front of the dishwasher, is leaking and water is pooling on the floor. This will provide a water source to pests.

4) The clear plastic lids, of the dry storage bins storing oatmeal flakes and other dry goods, are cracked. These lids are not cleanable and bacteria will live in the cracks, and/or small pieces of plastic could fall into food.
Corrective Action(s):
1) Repair or replace the temperature gauges and lights so they work correctly and accurate show the temperature of the washing and sanitizing water.

2) Repair or replace the sink and drain pipe so water no longer leaks from these areas, and the materials durable, smooth, sealed and cleanabel.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
The floor in the walk-in-cooler and the surrounding floor outside the cooler (dry storage shelves) is unsealed cement. The cement will absorb spilt food and is difficult to clean. This will attract pests.
Corrective Action(s):
Reseal the floor in the mentioned areas so it is smooth, level, durable, and cleanable.

Comments

A routine inspection completed:
- Coolers 4C or colder; freezer -18C; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher rinse cycle was 71C at the plate's surface as per max/min thermometer. The sanitizing/rinse cycle temperature gauge must read at least 82C/180F (or higher) at all times, in order for the machine to be sanitizing the dishes.
- Quats sanitizer was 200ppm in the spray bottles.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Do not change anything.
- Professional pest company contracted to service facility twice a month. Orkin Pest Company.
- All staff possess a valid FoodSafe Level 1 certificate.
