-General sanitation was excellent at the time of inspection.
- Walk-in coolers were < 4 deg C.
- Walk-in freezer was at -20 deg C.
- Upright freezer unit at -18 deg C.
- High temperature dishwasher had a final rinse of 72C on the dish surface (minimum of 71C required for sanitizing).Operational at the time of inspection.
- Quat sanitizer - satisfactory. Test strips are available.
- All handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Deli slicer found to be clean at the time of inspection.
- Equipment found to be clean and well maintained.
- General food storage practices good at the time of inspection. Foods stored off the floor and covered.
Note: Raw meats stored separately from ready-to-eat foods.
- Canned items are checked - no dented cans on shelves.
- Facility serviced by a professional pest control operator.
- No signs of pests noted at the time of inspection.
- Staff washrooms were clean; supplied with single use paper towels and liquid hand soap; hot/cold running water.
Note: Consultation on site conducted due to a scheduled construction.
Please provide more information about a temporary tables (a prep. area) in the hallway.
Disposables and liners for cooking equipment will be not working well for a renovation time. Different solution has to be find.for dishwashing (at list for cooking utensils/equipment/inserts/trays - e.g., a mobile self contained unit).
