Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse initially tested at 0ppm chlorine. Tubing to supply soap to the dishwasher was observed lying on the floor inside of being inserted into the soap container. Once soap and sanitizer was primed, soap was observed being dispensed into the final rinse cycle and a chlorine residual of approx 70ppm was measured in the final rinse.
Corrective Action(s): Rewash everything in the premises ie all utensils, food contact containers etc
Always test the dishwasher every morning and document the chlorine concentration in your daily log to demonstrate you are doing your DUE DILIGENCE.

***Premises to remain on Elevated Inspections for 2024/2025 due to repeat Critical Violations noted in previous inspection reports.

****Monitoring logs observed not being maintained. Last logs were documented for November, 2023. Document/record logs for all your equipment (Dishwasher/coolers etc) every day when in operation to demonstrate you are doing your due diligence especially in the event of a Food Borne Illness Complaint.

**No new mice droppings observed. Pest control contract remains in place. Multiple catch traps remain in place. Continue to bin all food items that can potentially be chewed into. Continue to protect all single use containers in the up front sushi prep area by keeping on the top shelf at the end of the day.

Deep fry batter observed being placed into the sandwich prep cooler after use.
Quat sanitizer in wiping cloth container observed at approx. 200ppm quat. Wiping cloths observed to be fully submerged
All cold holding equipment observed to be cold holding at <4c
Miso soup hot holding at >60c
Timers in place at deep fryers which alarm once the cooking cycle has been completed for the chicken balls and the teriyaki chicken. to ensure product is not undercooked
