Routine check:
Coolers (walk in and prep coolers) are at <4 C - good.
Hand washing station has liquid soap and paper towels.
Use tongs/utensils when possible. Disposable nitrile gloves are also available.
Hot holding at 60 C.
Reviewed procedures: Any foods to be hot held are to be heated to 74C prior to placing in hot holding unit.
Main kitchen dishwasher has a chlorine sanitizing rinse.
Quats sanitizer is used in spray bottle for food contact surfaces and also meat slicer
Provide a designated brush to help to clean the back of the meat slicer blade.
