Observation: Upright freezer - air and food temperature about -6C. Was just re-stocked but frozen food is at -6C.
Corrective Action(s): Verify that the temperature goes down to -18C (if it was on defrost cycle). If not, move food to the walk in freezer.

Observation: Some shelves and floor (under sink, in corners) requires cleaning.

Operator on site has Food Safe level 1 (or equivalent). Keep track of certificate expiry dates and renew prior to expiry.
Coolers are at 4C or colder with exception of small bar cooler (used to store only low risk food and small amount of sour cream/dairy).
Small bar cooler food temperature is at 5C. Discussed. Thermostat turned down during inspection.
Upright freezer - see above.
Pizzas are cooked and used/sold/discarded after 2 hours. Time tracking carried out.
Food storage - FIFO followed and storage in walk in is well organized.
Reviewed ingredient information.
Hand washing sink has hot/cold water, liquid soap, and paper towels.
Non-latex disposable gloves also available.
Quats sanitizer - 200ppm measured.
Cleaning - see above.
Recommend monitoring for pests.
