Observation: Facility has an ongoing pest issue- mice. Professional pest control company contracted. Traps in place.
Corrective Action(s): Ensure to remove droppings on a daily basis and continue to monitor the situation.

Observation: Rodent droppings observed from the following areas:
- Floor underneath back storage shelves
- Floor inside of the walk-in cooler
- Bottom shelves of the salad prep area
- Floor of the front prep area
Corrective Action(s): Ensure to have all droppings removed and affected areas sanitized before initiating any food prep in the morning.

Comments

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- High temperature dishwasher achieved 71.4'C at the plate level after final rinse.
- 200ppm Quats available in buckets to hold wiping rags. Automated dispenser at correct concentration.
- Ice machine no longer in use.
- Upstairs kitchen not in use for general public.
- Womens washroom handsinks properly equipped.

General maintenance and sanitation level of the facility require major improvement.
