Observation (CORRECTED DURING INSPECTION):
- Deep fried pork skin (chilled) and blood pudding observed around 14C when probed. They were being stored at the left corner of the display cooler.
Corrective Action(s):
- These items were discarded at the time of inspection. Ensure all potentially hazardous food items items are stored at 4C or below at all times.

Observation (CORRECTED DURING INSPECTION):
- Bleach sanitizer stripped out the test strip - this indicates that the chlorine level is too strong.
Corrective Action(s):
- Ensure to mix half a teaspoon of bleach to a litre of water to achieve correct concentration. Sanitizer was diluted at the time of inspection.

Corrective Action(s):
- Repair this unit to ensure there is uniform and smooth surface around the floor drain. Ensure there is no water pooling around the area after the repair.

- Observed glue board with live cockroaches on top of the grease trap.

- Display cooler (left side) not working - temperature observed high and the ambient temperature cannot be maintained at 4C or below.
- Display cooler for drinks (left side) not working. - temperature above 4C.
- Butcher's block worn out and cut-marks are too deep.
Corrective Action(s):
- Ensure above two cooler units are repaired. They should be capable of storing food items at 4C or below.
- Either sand the top surface of the butchers block OR replace the block. The surface should be smooth and non-porous to allow easy & effective cleaning.

Comments

Premises is a butcher shop and food retail.

- All coolers (except the ones coded as violations above) at 4C or below.
- All freezers at 0C to -18C.
- Handsink is fully equipped.
- Ensure all meat processing equipment is cleaned & sanitized every 4 hours during continuous use. They should be dismantled and deep-cleaned before closing every night.
- No basement storage locker as per the operator.

Follow up inspection to take place within 2 weeks.
