- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at/below -18'C.
- Temperature monitoring system in place.
- High temperature dishwasher achieved 73.4'C at the plate level after final rinse.
- 200ppm QUATs available at automated dispenser and in a spray bottle.
- Dough mixer cleaned/sanitized on a daily basis. OK.
- General food storage practice satisfactory.
- Washroom handsink satisfactory.
