Observation (CORRECTED DURING INSPECTION): High temperature washer final rinse not achieving minimum rinse temperature
-went through multiple cycles and only achieved 70-75 deg C as per your rinse thermostat, verified with probe thermometer and thrermolabel

-Observed the use of a Hydrogen Peroxy cleaner -this is not an approved sanitizer
Corrective Action(s): Repair unit.

You will need to Manual Dishwash ware as the sign posted in the meantime

-Use your approved QUAT type sanitizer or dilute bleach solutions. Should you want to use an alternative you will need Health Approval first

-Food cans are being reused for food preparation as a mold -the cans are rusted and are for single-use only
Corrective Action(s): Raise the lowest level of shelves at least >15cm off the ground to facilitate cleaning underneath and monitoring of pests

-Do not reuse single use containers -the food cans are rusting and may contaminate foods -use dishwash safe containers
