303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] Observation (CORRECTED DURING INSPECTION): Quats santiizer (Oasis 146 ) in all of the spray bottles found to be too strong (>>2000 ppm). It appears that the quats dispenser in the main kitchen is not working properly and sanitizer strengths are not tested. Corrective Action(s): Do not use any of the concentrated sanitizer spray bottles bottles. A bottle of sanitizer was diluted 10 times to make it 200 ppm. Recalibrate or radjust the quats dispenser so that it dispenses the sanitizer at 200 ppm. Sanitizer test strips must be available at the Cogniscenti Cafe for testing the strength. Violation Score: 5

*Do not store any jugs or utensils etc.near the hand sink ( especially underneath soap dispenser and paper towel dispensers) to prevent the risk of splashing on to utensils. Sliding door cooler < 4 C Upright freezer < -18 C. Front display cooler < 4 C Dairy cooler < 4 C Hot holding of soup> 60 C. Liquid soap and paper towels available at the hand sink. General sanitation is satisfactory. Temperature logs are up to date.
