Routine inspection conducted:

-Handwash station adequately supplied.
-Refrigeration temperatures satisfactory; Hot-holding units operating >60'C. Thermometers available for temperature monitoring.
-General food storage practice satisfactory.
-Tools and equipment maintained in sanitary condition. Deli slicer used 3 times/week.
-High temperature dishwasher achieved 76.4'C at the plate level after final rinse.
-100-200ppm chlorine solution available in buckets for front/kitchen.
-No evidence of pest activity observed at this time.
-Back storage area satisfactory. Washroom handsink satisfactory.

NOTE: Cooked sausage rolls were being cooled at this time. Internal temperature at ~46'C. Operator had advised these were cooked <1 hour prior to the inspection and moved them to cooler at this time. Ensure all cooked foods are cooled from >60'C to 20'C within 2 hours and from 20'C to 4'C within the next 4 hours.
NOTE: Ensure to remove the ice build-up in freezers, as this may affect the temperature in future. Currently all freezer temperatures met requirement of Health.

Facility maintained in a good sanitary condition. No concerns observed at this time.
