Observation: Sanitizer spray bottle using Sani-Stuff quats solution 0ppm in concentration.
Corrective Action(s): Ensure an approved food contact surface sanitizer solution is available for use when in operation. To be made new on each production day. Follow manufacturer instructions of diluting 22ml of Sani-Stuff into 4 litres of water.

This sanitizer solution must be used for cleaning the preparation table, design table, and all surfaces of the rolling machine that comes into contact with the candy.

Routine inspection:

2 compartment sink available for use. Note: 100ppm bleach or 200ppm quats for 2 minutes can be used for the manual warewashing of pots, spatulas, cutters, measuring cups, etc. Ensure all utensils are air dryed.
Hand sink provided with liquid soap and paper towels.
Preparation and design table smooth, non absorbant and easy to clean.
Forming and cutting of candy done by hand or by machine. Machine can be disassembled and can be cleaned in place. Components that come into contact with candy is non absorbant and easy to clean.
Colouring agents stored in the cooler.
Packaged candy stored off the floor.

Recommend sending production manager to take FOODSAFE level 1.
