Observation (CORRECTED DURING INSPECTION): Hand washing station in staff washroom not supplied with liquid soap in dispenser. Staff placed liquid soap in disposable dispenser at the hand washing station during inspection.
Corrective Action(s): Maintain all designated hand washing stations adequately supplied with hot and cold running water, liquid soap and paper towel to ensure staff are washing hands properly and at adequate frequency to remove contamination.

Observation:
1. Few drain/fruit flies observed in the dishwashing area and in the kitchen. UV fly trap observed in place but not functioning.

2. Rodent droppings observed on the floor in the equipment storage area near the dough mixer.
Corrective Action(s):
1. Repair/replace UV fly trap to ensure it is functioning. Monitor fly population and contact professional pest control company if fly population increases to assess and apply treatment as necessary.

2. Clean rodent droppings from the floor using appropriate PPE and sanitize the area using bleach at a concentration of 5000 ppm.

Observation: Food debris build-up observed in the following areas:
- The hand washing station (inside the basin, on the nozzles and on the backsplash)
- Wall to the left of the hand washing station in the kitchen
Corrective Action(s): Degrease, clean and sanitize the aforementioned areas to remove food contamination. Clean the premise more frequently to prevent build-up of food and to maintain the premise in a sanitary condition.

Observations:
- Walk-in cooler at 2'C
- Sandwich, display and beverage coolers at or below 4'C
- All freezers at or below -19'C
- No hot-holding on site
- Hand washing station in kitchen observed unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- QUATs sanitizer in spray bottles (X2) measured at 200 ppm QUATs concentration with test strip
- 3-compartment sink available with drain plugs and bleach
- All food observed stored at least 6 inches off the floor
- Raw meat stored in away from ready-to-eat foods
- Ice wand available for cooling large batches of potentially hazardous cooked foods
- Staff observed practicing proper cooling methods (e.g. using shallow pans, storing foods in smaller batches) during inspection - good!
- FOODSAFE Level 1 trained staff available on site
- Permit posted in a conspicuous location on site
