Routine Inspection
-Met with operator at White Rocks Elk Kitchen.
-No changes have been made to the previously approved foods (frozen borsch, frozen cabbage rolls and canned vegan antipasto).
-Only selling product at Farmer's Markets.
-Discussed proper method of manually dishwashing and sanitizing food contact surfaces.
-Quats available for surface sanitizing. Showed operator how to make a 200 ppm Quats solution.
-Low temperature dishwasher registered at 100 ppm chlorine.
-Hand sink equipped with hot/cold running water, liquid soap and single-use towels.
-Cooler at 4 C or below.
-Freezers at -18 C or below.
-Ingredients brought on-site on the day of preparation.
-Operator has FoodSafe Level 1 certificate training.

Email to the EHO the following:
1. Updated contract to use the premises.
2. pH, water activity, and shelf stable tests for canned vegan antipasto.
