Observation (CORRECTED DURING INSPECTION): Rice in the hot-holding unit measured at 55C internal temperature. Operator informed that it was made 1 hour ago.
Corrective Action(s): Re-heat rice to 74C and hot-hold at 60C or higher.

Observation (CORRECTED DURING INSPECTION): QUATs sanitizer buckets measured at 50ppm. One green bucket used for QUATs bucket.
Corrective Action(s): Prepare QUATs sanitizer buckets for the back and front to measure at 200ppm. Designate QUAT buckets as red. Do not use green bucket for QUATs as it is designated for detergent use. QUATs sanitizer buckets must be changed regularly if solution is soiled or every 2 hours which ever is lesser.

Observation (CORRECTED DURING INSPECTION): Observed staff not washing their hands when handling food after they have used personal items (phone) or transitioning between unrelated services that may cause cross-contamination.
Corrective Action(s): Staff to wash hands immediately. Staff must wash hands prior to handling food when transitioning between unrelated activities that may cause potential cross-contamination.

Observation: Built-up food debris observed underneath the worktables, behind the cookline, and underneath the shelving units in the walk-in cooler.
Corrective Action(s): Clean and sanitizer the aforementioned items. Follow facility's Sanitation Plan on daily cleaning and sanitizing of premises. Corrected by: September 27, 2022.

Comments

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
Prep cooler, stand-up cooler, and walk-in cooler measured at 4C or lower. Walk-in freezer measured at -18C. Meat hot-holding unit measured at 60C or higher.
3-compartment sink available for manual warewashing. QUATs dispenser measured at 200ppm.

Previous outstanding concerns in the report#254266 have been addressed:
-Door sweep installed in the back door.
-Exposed wood have been sealed at the electrical panel area.
-Latch have been installed at the walk-in cooler and freezer.

TO DO: PUrchase additional QUATs buckets to be available at the front and back kitchen area.
