Observation (CORRECTED DURING INSPECTION): Noted several flies on raw chicken as it was being cut by an employee. Instructed employee to discard the chicken. Noted vegetable repackaging area next to raw meat area. Discussed potential cross contamination.
Corrective Action(s): Do not package foods that have come into contact with pests.

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Noted container of bean sprouts in open face cooler filled above max line. Internal temperature of produce 8C to 10C.
Corrective Action(s): Ensure bean sprouts are maintained at 4C or less. Do not fill/store above max line in open face cooler. Suggested operator obtains ice or ice packs to help maintain product at 4C or less on warmer summer days.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: A) Only two drain plugs available, but there is two 2 compartment sinks on site.
B) Noted several reusable wiping cloths being used to wipe cutting boards. Several cloths were hanging on hooks at the two compartment sink.
C) Noted meat grinder that had ground beef still in it. Manager said unit is used once a day.
Corrective Action(s): A) Obtain two sets of drain plugs. One for each sink.
B) Ensure 100ppm chlorine sanitizer is made fresh daily. Keep all wiping cloths stored in sanitize solution to prevent mirobial growth.
C) Ensure meat grinder is taken a part and thoroughly cleaned and sanitized after each use. This is to be done once the pest problem is rectified and the premises obtains health approval to process raw meat again.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand wash station in the food processing area was obstructed with boxes. The hand sink was plugged with tissue paper. There was no soap or paper towel. Hot and cold running water available.
Corrective Action(s): Keep all hand wash stations unobstructed, unplugged and fully equipped with soap, paper towel and hot/cold running water.

Observation: A) Noted bag of peanuts stored on the ground
B) Noted house flies landing on raw chicken being cut at time of inspection. Instructed for raw chicken was discarded at time of inspection.
C) Lights in the food processing areas did not have covers
Corrective Action(s): A) Keep all foods stored 6 inches off the ground to protect from contamination and facilitate cleaning.
B) Discontinue processing raw meats once the fly problem has been resolved and the premises is free from pests. An inspection is to be done to confirm this.

Observation: Noted several house flies in the meat cutting area, on food equipment, on food being cut and full on glue board. Premises is to stop processing raw meats (ie. cutting, grinding, prepackaging) until an inspection is conducted to verify that the pest problem is rectified.
Corrective Action(s): Do a thorough cleaning in this area. Removal all cardboard, news paper and raw wood items. Do a thorough cleaning/sanitizing of all equipment, surfaces and the floors. Report problem to the pest control technician. Keep back door to premises closed at all times. Premises is to stop processing raw meats (ie. cutting, grinding, prepackaging) until an inspection is conducted to verify that the pest problem is rectified.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Noted back door beside processing area open with clear flaps pulled back. Lots of flies noted outside near the bins. Several cardboard boxes and news papers in the repackaging processing area noted. Meat grinder had raw meat still on it. Operator thinks they currently have a contract with a pest control company.
Corrective Action(s): Keep back door or the flaps closed. Clean up the outside of the premises to prevent pest attraction and potential entry. Ensure all food equipment is taken a part and thoroughly washed and sanitized after each use. Report problem to pest control technician and follow all of their recommendations.

Observation: Noted dust and food debris at work counters in the processing areas and around the two compartment sinks as well as lots of clutter.
Corrective Action(s): Do a thorough cleaning in the repackaging/processing area. Reduce clutter and remove all items not required for the operation.

Observation: A) Noted counters in food processing/repackaging area that was raw wood.
B) Noted peeler that had tape on the handle
C) Noted rusting racks in two upright sliding two door cooler units and rusting lid for freezer that is dented and the seal is coming off/loose
D) Noted extremely worn away cutting boards.
E) Noted lights in food processing/repackaging area with no covers.
F) Noted several cloths hanging from hooks at the two compartment sinks
G) Noted several boxes of cardboard and news papers in the processing/repackaging area
Corrective Action(s): A) Repair/replace counters that are damaged and have exposed wood. All surfaces are to be smooth and washable.
B) Remove tape from peeler. All equipment is to be smooth and washable.
C) Repaint/replace rusted racks in coolers. Repaint/replace freezer lid and fix loos seal. All equipment is to be smooth and washable.
D) Resurface/replace cutting boards. All equipment is to be smooth finish.
E) Obtain sleeves/tubes/covers for lights in the food preparation areas
F) Use single use disposable cloths to wipe or keep all reusable cloths stored in sanitizer solution to prevent microbial growth.
G) Remove all cardboard and news paper from the premises and the food processing/preparation area.
