Observation (CORRECTED DURING INSPECTION): Quats sanitizer pail in the front was approximately 50ppm.
Corrective Action(s): Quats sanitizer at 200ppm is required to properly sanitize food contact surfaces. Sanitizer pail was refilled with 200ppm sanitizer at the time of inspection.

Observation: Grease trap for the back prep sink is not working properly. A plastic bottle is connected a hose to collect water. Container overflows when water is run continuously.

Comments

-Walk-in cooler was at 3C.
-Prep cooler was at 4C (top and bottom).
-Under counter freezer was at -18C,
-Hot holding table and cabinet were greater than 60C.
-Hot potentially hazardous foods properly cooled and were probed at or below 4C.
-High temperature dishwasher had a final rinse of 71C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. raw meats stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Staff FoodSafe Level 1 valid until August 5, 2023. Ensure at least one staff member has FoodSafe Level 1 or equivalent training while in operation.
-Facility is bottling "Horchata authentic Mexican drink". Beverage is made from a powdered solution. Cease bottling Horchata immediately and provide the following information before continuing to bottle the drink: provide a letter of certification that the bottles are considered food grade and update labels with storage information (keep refrigerated), ingredients (potential allergens), contact information for the store, packaged on date, etc.
