Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available on site at the time of inspection.
Corrective Action(s): Ensure that all food contact surfaces/equipment/utensils are washed and sanitized with an approved sanitizer. The operator opened a brand new bottle of bleach and made sanitizer solution at the time of inspection. The concentration of bleach noted at 200ppm.

Observation: Hand wash station had adequate supply of hot and cold running water, paper towels but lack liquid soap.
Corrective Action(s): Ensure that hand wash station is equipped with liquid soap, paper towels and hot/cold running water.

Observation: Scoops were observed inside the bulk bins. Some of the hooks were detached/broken.
Corrective Action(s): Store the scoops outside the bins in a sanitary condition. The operator stated that new hooks will be attached to the bulk bins for storing scoops.

Comments

Routine inspection conducted at the food store and the following observations were made during the inspection:

Temperature:
- Walk-in freezer at -13C
- Walk-in cooler at 3C
- Chest freezer at -15C
- Chest freezers (x2) between -5 to -6C.
**Ice build up noted in all three chest freezers. Consider defrosting/service the freezers.
- Stand-up freezer at -18C.
- No temperature logs were maintained.
** It is advised to record and maintain daily temperature logs.

Hygiene and Sanitizing:
- Hand wash station present. See violation above.
- 3 compartment sink available in meat processing area.
- 2 compartment sink present in back area, previously used for repackaging.
- Band saw was not in use at the time of inspection but found in sanitary condition.

Storage:
- All products were either in original packaging or covered inside coolers.
- Back storage area had clutter in it.
**Re-organize the back storage area.
- Chemicals and cleaners were stored separate from food.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.

Note - A follow-up inspection will be conducted to ensure compliance.
