Corrective Action(s): Instructed staff to reheat to 74C before putting sauce back into the hot holding unit.
Staff immediately reheated sauce.

- All hot holding except the one noted above measure 60C and above
- Sushi rice pH measure 4.0 on test strip
- QUAT sanitizer measure 200ppm at bucket and dispenser
- High temperature dishwasher final rinse measure 76C at plate level
- Two compartment sink also available
- Temperatures are checked twice a day and recorded.
- No signs of pests, pest control company routinely checks, last pest control report reviewed, no activity inside restaurant
- Premise is well lit
- General sanitation good.
