Observation (CORRECTED DURING INSPECTION): The chocolate malt mix inside the hopper of the malt was too warm at 48- 49F. The blue cheese inside the insert on top of the make table was too warm at 47F.
Corrective Action(s): Ensure temperature is 40F (4C) or below. Blue cheese can be labelled with time stamp and discarded after 4 hours.
