Observation: Temperature of the food stored inside the sandwich fridge and the walk-in fridge was too warm. Sandwich fridge was 7.3C measured at the second roll of product from the front. Portioned creamer inside the walk-in was 9C. Temperature of the milk and eggs fridge was marginal.
Corrective Action(s): Technicians have been contacted to service the units. Temperature should be 4C/40F maximum.

Observation (CORRECTED DURING INSPECTION): Thermos for the milk needs to be cleaned and sanitized.
Corrective Action(s): Follow the instruction on the dishwashing sign. Practice wash/rinse/sanitize. Use bleach solution to sanitize as discussed.

Comments

Having a probe thermometer in a cup of water stored amongst the product in the fridge to obtain a more representative measurement of food temperature is a good idea. However, the thermometer is inaccurate (off by 20F). Calibrate the probe.

General sanitation is good. Washroom is clean.
